Ooh summer is almost here and I am excited for pool parties and eating way too much bbq. The quick approaching summer reminds me of yummy dishes I have had on the beach in far away lands that I wish I could escape to, again. I saw some great looking fish on sale in the market and since I am not the GREATEST cook, I thought ceviche would be one thing I could make and look nicely in some photos. I recently came across a pro-chef magazine, and this shoot was inspired by a beautifully plated beef tartar dish I saw. Not exactly the same, but it definitely gave me an idea to run with (and to snack on!)
Here’s a quick recipe too.. add or subtract what you like for your tastes, what’s available, or how many people:
2 filets of white fish, chopped in small chunks (I used halibut and tilapia)
1/2 c. of mixed seafood (this mix had octopus, squid, shrimp, and mussels!)
1/2 c. of lime juice (I sometimes add lemon as well)
1/2 c. chopped cilantro
1/2 avocado, diced
1/2 small red onion, diced
2 serrano peppers, diced
salt to taste
Combine everything in a bowl, mix the lime juice in very well and refrigerate covered for 4 hours, minimum, to cook the fish/seafood. Grab some chips, a beach, and enjoy!
