I garden quite a bit and okra is about the only thing that will survive in Houston summers so I will have GOBS of okra and need recipes to use it for! Typically you wouldn’t use okra and a shrimp creole dish but I think it’s a pretty delicious addition.
1lb of shrimp, peeled and cleaned
1lb of okra, washed and chopped
1 small onion diced
1 small can of whole tomatoes
1 tsp black pepper
1 tsp onion powder
1 tsp paprika
1 tsp salt
1tbsp worchestershire sauce
1 tbsp louisana hot sauce
In a pan, heat 1/4 cup oil and fry okra. This helps it not get that snotty texture we all dislike. Add onions and cook until translucent. Add tomatoes and all seasonings. Cook down until the tomatoes thicken a bit. Add shrimp and cook for 2-3 minutes, do not over cook the shrimp. Serve over a bed of white rice!
